They stopped being used as a way to explain events that weren't understood because people developed a deeper understanding of the world around them. This allowed these events to be understood, and so people stopped using myths and mythological creatures to explain them.

Most such myths are not real, but cultural explanations of natural events. That, or they are metaphorical explanations for spiritual happenings, or fables used to teach - again, not literal descriptions.

Most have been debunked with science. However, fae folk beings are still believed in by many and I still hear of sightings of them all the time. I've also heard of modern sightings of things like chupacabra and other not so friendly beings. However, beings like unicorns and mermaids are believed to have moved on to the astral planes by some and just no longer live in our realm of existence.

The thing is really that no one knows. It could have been all myth and make believe or mistaken identity. No one really knows but I like to think they are still out there just because it makes the world seem a bit more magickal. Even if they only live on the astral planes.

Unicorns were a myth perpetuated by vikings/Scandinavian whalers that would kill narwhal and sell the horn as that of the mythic unicorn. The mermaid was a tale created by bored/drunk/ill sailors - having people interested in your travels got you drinks in the tavern or helped fund your next expedition. People believe they moved on to the astral plane because they didn't do their research. Much the same can be said about most other crypto- zoological mysteries, though there's always room for the "maybe."

Fae and the like are generally considered nature spirits. Most Irish roots in the fairy traditions and the history that is so popular dates back to the early history of the peoples there, and so forth - not unlike legends of King Arthur and whatnot.

I don't know how or why these creatures were created but if dwarfs are real, why not all of the others

Dwarves real? Do you mean the Dwarves of Snow White? Or undersized Human Beings? There are many of the latter, and they have their problems. I have neighbours (a married couple) who would be classed as Dwarves (under 3Ft 6ins.) They have many problems that they must cope with. Especially as their two sons are "Normal size".
But they live as normal a life as possible, and are well respected in our village.

Dwarfs as in people who have dwarfism are real. This is a genetic thing. Dwarfs in line with Norse or Celtic faith however, again, are more like nature spirits and the like or metaphors and fables utilized to teach lessons.

I have to admit, it somewhat saddens me if we are taking "little people" as evidence to the existence of mythological creatures.
