I don't have a lot of resources for specifically Celtic or Norse but I can provide a good link to some Granny Magic/ Folk Magic which would be more Appalachian.

Raven Kaldera's books and website are a great resource of Norse/Northern Shamanism. stay away from the DJ Conway books in my experience.
