Define giving part of an animal.

Because I personally see mutilation to be as bad as killing.

You can offer an effigy of the animal. Origami, papier-mâché, clay – something you can burn or otherwise "sacrifice" during your ritual.

If you went hunting, and shot a deer for it's meat. Then you wanted to sacrifice one of it's organs and place it on your altar, I think that would be acceptable.

That being said, I abhor sport hunting.

Komachi has a good idea. An effigy, or representation, of an animal that you want to use would probably suffice, especially if you weren't comfortable with an actual animal.

Yeah, I would go with an image of the animal you want to offer. Preferably something you crafted yourself.

That's actually how "emmas" appeared on Shinto practice: the people who couldn't afford to give a horse to the shrines would give wooden figures instead. And it evolved from there.

I personally think something you have crafted yourself, regardless of whether you are good at crafting or not, will hold more value than something bought.

But they are your gods, you know them better than me.
