a question about Samhain

Greetings all..'

I have a question about Samhain, and the proceedings for a ritual. I have written out my ritual and know exactly what i am going to do, but.. i have read that i should leave a plate of food out for the spirits.. how does this work? Do i just put a plate out? i mean, sure i probably sound stupid writing this, but i'm not sure how it works, and i mean, what do i leave on the plate?

Apples are the best food to offer a spirit. I don't bother with a plate I just leave a few apples in a basket on the porch with a candle. Sometime by morning an apple or two is gone, but sometimes all of them are still there. What ever is left the next day I bury in the garden.
