Yeah,it is used for grinding herbs and such,
but it can also serve as a representation of earth on your altar,can symbolically mix things together,it can serve any use within the binds of common sense and logic.
I use mortars and pestles for grinding or grinding ingredients when casting a spell or ritual. It is very helpful because if you can't grind an item, mortar and pestle might come in handy.
