My favorite book on herbal medicines in "Herbal Medicine" by Dian Dincin Buchman. The book is well written, contains the appropriate cautions in using herbal remedies, and is clear in its instructions on how to make the preparations.
And if you're also interested in magical herbalism I would recommend "The Master Book of Herbalism" by Paul Beyerl
In general, if it's medicinal herbalism that interests you I would avoid the books on herbalism generally found in the magic/Pagan sections of books stores or published by publishers in this genre. They often gloss over the potential health problems that can occur with using herbs as medicine, and in some cases recommend herbal remedies that could prove deadly.

There is a plethora of Natural Remedy or Natural Healing Books that have been printed over the years. I actually collect them and have books dating back to the late 19th century. You can often find them at thrift stores, used books stores, and even yard sales. Some will list the same information that other books have while others might have a new tidbit that you have not heard before. You do need to be very careful when treating with herbs and other natural remedies since there can be side effects or warnings for those with certain health issue to avoid a particular herb, etc. Dosages are very important too since not enough could have little impact while to much could be harmful or lethal. Many of these books are not limited to healing with herbs but include all types of foods especially honey, vitamins, minerals, and therapies. Today we do have the wonders of the internet and therefore have many sites that can work like a book. Below is a link to a site that I recommend;
Two i would recommend is Garden Witch's Herbal by Ellen Dugan and The Master Book of Herbalism by Paul Beyerl. Both contain good herbal resource for Herbal use Magical or not.
I have that Ellen Dugan book. All of hers are pretty good (if a little on the fluffy side) but she is really knowledgeable and grows a lot of her own, so she writes a lot too on the planting and care of most herbs and how to use them for magick.
Ill have to check out that Master Book of Herbalism
The absolute best book on magical herbs is Cunningham's Encyclopedia of Magical Herbs by Scott Cunningham. It has been recommended to me from multiple books I have read and I am saving up to buy it myself.
The first book I got on herbal remedies was Herbal Remedies by Non Shaw and Christopher Hedley. It is now out of print but if you can find a copy I highly recommend getting it, it is still one of my favorites. Another one I love that I just recently found and give to a lot of my clients is 20,000 Secrets of Tea by Victoria Zak. It is available as both a paperback and an e-book.
